Those sound delicious Carol! We had so much family stuff going on this autumn, that I didn’t get very many herbs preserved this year, however I’m looking forward to using the herbal salt, as I did get that done 🙂

In addition, I make an herbal paste with a herb + garlic + oil . I freeze this paste in ice cube trays as you mentioned above
and then it’s ready to go when I need it in a dish. Also Pesto.. with the simple addition other ingredients, can be a super way to freeze
a flavourful herb into a wonderful ready-to-use herbal ingredient.
Love making the herb-infused vinegars you mentioned. YUM!
